First, soak 1 cup of moong dal for 30 minutes. Then, pressure cook it with 2 cups of water, 1 tsp turmeric powder, and salt to taste. Once cooked, mash it lightly.

In a pan, heat 1 tbsp oil and add 1 tsp cumin seeds. Once they splutter, add 1 chopped onion and sauté until golden brown. Then, add 1 tsp ginger-garlic paste and cook for 1 minute.

Next, add 1 chopped tomato and cook until it turns mushy. Then, add 1 tsp coriander powder, 1 tsp cumin powder, 1 tsp garam masala, and 1 tsp red chili powder. Mix well.

Now, add 1 cup chopped spinach and 1 cup chopped methi leaves. Cook until they wilt. Then, add the cooked moong dal and mix well. Let it simmer for 5 minutes.

In a separate pan, heat 1 tbsp oil and add 1 tsp cumin seeds. Once they splutter, add 1 cup soya chunks and sauté until they turn golden brown.

Add the soya chunks to the moong dal and spinach mixture. Mix well and let it cook for another 5 minutes. Your healthy and protein-packed Soya Saag and Moong Dal is ready!
